• 24 wonton wrappers
  • Olive oil cooking spray
  • 2 large mangoes, peeled, finely diced
  • 2 green onions, thinly sliced
  • 1 long red chilli, seeded, finely chopped
  • 1 tablespoon chopped fresh coriander leaves
  • 1 1/2 tablespoons lime juice
  • 24 (300g) small cooked prawns, peeled (tails intact), deveined
  • Step 1 Preheat oven to 180°C/160°C fan-forced. Spray both sides of wonton wrappers with oil. Line holes of two 1/3 cup-capacity muffin pans with wonton wrappers. Bake for 10 to 12 minutes, swapping trays halfway during cooking, or until golden and crisp. Stand in pans for 2 minutes. Transfer to a wire rack.
  • Step 2 Combine mango, onion, chilli, coriander and lime juice in a bowl. Spoon 1 tablespoon mango mixture into each wonton cup. Top each with 1 prawn. Serve immediately.
